Berg details how high dietary carbs overload the body’s ability to keep blood sugar at one teaspoon. This constant sugar toxicity inflames the endothelial lining, damages nerves (especially the long ones in the feet), and contributes to all seven leg-warning conditions. He contrasts the conventional approach — ‘managing’ blood sugar with medications and even glucose pills — with addressing the root cause via nutrition. Research, he claims, shows type 2 diabetes can be reversed in 10 weeks on a low-carb diet. A low-carb diet also rapidly reduces water retention (7–11 lb loss in two days) because carbohydrates drive fluid accumulation.
Minimizing carbohydrate intake reduces the need for high insulin secretion, allowing insulin sensitivity to recover. Without frequent glucose spikes, the glycation damage to endothelial cells and nerve sheaths diminishes, while the drop in insulin and improved liver function facilitate fat burning and fluid mobilization.
