Lateral Shift to Tallow-Fried Snacks
Gary Brecka emphasizes 'lateral shifts' — swapping out favorite foods for nutrient-dense versions. He highlights Masa chips as a prime example: made with organic non-GMO corn, grass-fed beef tallow, and Redmond sea salt, they contain no artificial dyes, MSG, or preservatives. Steven Rofrano, the creator, explains that the chips do not taste beefy or greasy and have been embraced by both health enthusiasts and people who usually reject health foods. The production is manual and limited, but plans for automation will eventually lower prices and increase access. For those who cannot purchase them, the protocol can be adapted by buying organic corn tortillas and frying in tallow at home.
Tallow provides stable saturated fat that doesn't oxidize easily, delivering vitamins and promoting GLP-1 secretion. It is free of the polyunsaturated fatty acids that compete with alcohol metabolism by aldehyde dehydrogenase, reducing liver burden. Saturated fat triggers satiety signals more effectively than seed oils, as shown by studies where children consumed 250–300 fewer calories when eating saturated fat with carbs.
Gary says: 'I use Masa chips for party platters. You can recreate a nutrient-dense, healthy, guilt-free snack that actually looks good.' Steven shares: 'I fed them to my extended family, a lot of whom are not interested in health... The fact that they liked them set a light bulb off.'
I do lateral shifts where we take all kinds of different foods that you love to eat and swap them for things that are more nutrient-dense that feed your cellular biology.
